Ingredients

  • 600 g chicken breasts or thighs
  • 60 ml fresh lemon juice
  • 1 tbsp lemon zest
  • 60 ml olive oil
  • 3 cloves garlic minced
  • 2 tsp fresh thyme
  • 1 tsp salt
  • 0.5 tsp black pepper


Instructions

  1. Whisk 60 ml lemon juice 1 tbsp lemon zest 60 ml olive oil 3 cloves garlic 2 tsp thyme 1 tsp salt and 0.5 tsp pepper in a bowl.
  2. Add 600 g chicken and coat evenly then marinate for at least 30 minutes.
  3. Preheat grill to medium heat and oil the grates lightly.
  4. Grill chicken for 5 to 7 minutes per side until internal temperature reaches 74 C.
  5. Remove from grill and rest for 5 minutes before serving.
