Ingredients

  • 3 cups cooked pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber chopped
  • 1/3 cup red onion sliced
  • 1/2 cup Kalamata olives sliced
  • 3/4 cup feta cheese crumbled
  • 2 tablespoons fresh herbs chopped
  • 1/3 cup olive oil
  • 2 tablespoons lemon juice
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Drain and cool completely.
  2. Chop the cherry tomatoes cucumber red onion and olives into bite sized pieces.
  3. In a small bowl whisk together olive oil lemon juice salt and black pepper until combined.
