Ingredients

  • 2 large chicken breasts, cut into cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • 3 cloves garlic, minced
  • 1 1/2 cups cherry tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 2 cups chicken broth
  • 2 cups uncooked penne pasta
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Season 2 large chicken breasts cut into cubes with 1 teaspoon salt and 1/2 teaspoon black pepper. Heat 2 tablespoons olive oil in a large skillet over medium high heat and sear chicken for 5 to 7 minutes until golden and cooked through. Remove and set aside.
  2. In the same pan add minced 3 cloves garlic, 1 1/2 cups cherry tomatoes, and 1 teaspoon Italian seasoning. Cook for 3 to 4 minutes, gently pressing tomatoes to release juices.
  3. Pour in 2 cups chicken broth and 1 cup heavy cream. Stir well and bring to a simmer. Add 2 cups uncooked penne pasta, ensuring it is mostly submerged. Cover and cook 12 to 15 minutes, stirring occasionally until pasta is tender.
  4. Return chicken to the pan and stir in 2 cups fresh spinach. Cook 2 to 3 minutes until spinach wilts. Add 1/2 cup grated Parmesan cheese and stir until melted and creamy.
  5. Let rest 5 minutes before serving to allow sauce to thicken. Adjust seasoning if needed and serve warm.
