Ingredients

  • 4 cups broccoli florets
  • 2 cups cooked white rice
  • 2 cups shredded cheddar cheese
  • 4 tbsp butter
  • 1 small onion chopped
  • 4 tbsp all purpose flour
  • 2 cups milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika


Instructions

  1. Preheat the oven to 375°F and grease a medium baking dish.
  2. Steam the broccoli for 3 to 4 minutes until just tender then set aside.
  3. Melt butter in a saucepan over medium heat then add onion and cook for 3 minutes until soft.
  4. Stir in flour and cook for 1 minute while stirring constantly.
  5. Slowly whisk in milk and cook for 4 to 5 minutes until thickened.
  6. Add salt pepper paprika and 1 1/2 cups cheese then stir until smooth.
  7. In a large bowl combine rice broccoli and cheese sauce and mix gently.
  8. Transfer to baking dish top with remaining cheese and bake for 25 minutes until bubbly.
