Ingredients
- 300 g pasta
- 250 g cherry tomatoes
- 200 g fresh mozzarella
- 60 ml olive oil
- 1 clove garlic
- 20 g fresh basil
- 5 g dried oregano
- 5 g salt
Instructions
- Preheat the oven to 200 C and slice 250 g cherry tomatoes in half then place them on a baking tray lined with parchment paper and drizzle with 30 ml olive oil sprinkle 5 g salt and 5 g dried oregano then roast for 20 minutes until soft.
- Bring a large pot of water to a boil add 10 g salt and cook 300 g pasta until al dente according to package instructions then drain and reserve 60 ml pasta water.
- Cut 200 g fresh mozzarella into bite sized pieces and set aside at room temperature.
- In a blender combine 20 g fresh basil 1 garlic clove and 30 ml olive oil then blend until smooth and adjust salt if needed.
- Transfer cooked pasta to a large bowl add roasted tomatoes mozzarella and basil sauce then toss gently adding reserved pasta water if needed for consistency.
- Let the pasta rest for 5 minutes before serving to allow flavors to combine evenly.
